The 165°F Myth and Pasteurization

For years, the USDA has hammered home a single number: 165°F (74°C). The rule states that all poultry must be cooked to this internal temperature to be considered safe from Salmonella and Campylobacter. However, this is heavily misunderstood and results in chalky, dry chicken breasts.

Pasteurization is not just about temperature; it's a function of temperature and time. At 165°F, bacteria are killed instantly (in under 1 second). But you can achieve the exact same 7.0 log reduction in bacteria by holding chicken at 155°F (68°C) for 54.4 seconds, or 150°F (66°C) for 3 minutes.

Breast Meat vs. Dark Meat

While 155°F is the secret to perfect chicken breasts, applying that same logic to chicken thighs or drumsticks is a mistake. Dark meat contains significantly more connective tissue (collagen) and fat than white meat.

At 155°F, dark meat is safe to eat, but it will be chewy, bouncy, and slightly unappetizing. To break down that tough collagen into gelatin, dark meat needs to be cooked to a much higher temperature—ideally between 175°F and 195°F (79°C–90°C). At this stage, the meat becomes fall-off-the-bone tender.
